Baked oatmeal is by far one of my favourite breakfast. I love making extra to warm up for a late-night snack, or for breakfasts for the next day or two. It’s just the best breakfast ever!
Baked Oatmeal
½ cup butter
½ cup brown sugar
2 eggs, beaten
3 cups oats
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 cup berries (any variety)*
Melt butter. Add brown sugar and eggs. Add other ingredients and mix. Soak overnight if desired, or bake right away. Bake in greased 8×8″ dish, uncovered, for 40 minutes at 350 degrees.
*Can also put raisins, coconut, nuts, etc. Or keep it plain, if desired.
