Three-Grain Peanut Chocolate Bread
1/2 cup wheat flour
1/2 cup white flour
1/2 cup oatmeal
1/2 cup cornmeal
1/4 cup milk powder (I used coconut milk powder)
1/4 cup cocoa
1/2 cup sugar
3 tsp baking powder
1 tsp salt
2/3 cup peanut butter (I used all natural)
1 1/2 cups milk
1/2 cup chocolate chips (optional)
Mix all dry ingredients together. Stir in peanut butter. Then mix in egg and milk and mix well. Pour into greased bread pan or muffin tins. Bake at 350F: approximately 20 minutes for muffins and 50 minutes for loaves – or until toothpick comes out clean. Cool 10 minutes in pans, then remove.
These are a variation from a recipe in the book ”More-With-Less”.
