These granola bars are delicious and healthy! The left granola bar, in the above picture, was made with ground flax, small dried apples, mini (very mini!) marshmallows, and mini chocolate chips. A favourite for children! The one on the right was made with ground flax, almond pieces, dried apples, and dried cranberries. Very delicious!

Granola Bars

3 cups oats
1/3 cup chopped pecans
1/2 cup coconut
1/2 cup wheat germ
1 cup honey
1/2 cup brown sugar
1/4 cup butter
4 tsp vanilla
1 cup extras, such as dried fruits, flax, mini marshmallow, mini chocolate chips, etc
Place oats, pecans, coconut and wheat germ in a pan and toast at 350 for 10-15 minutes, or until lightly browned, stirring often.
Melt honey, brown sugar, butter and vanilla on medium heat. Add the “extras” to the oats. Pour the melted ingredients over the dry and mix until all coated. Line 9×13 pan with wax paper; pour in granola mix. Press down with another wax paper. Let cool (about 2hrs). Turn pan over and cut into bars. Wrap individually (or place a few in ziploc bags) and store in the fridge. You won’t regret making these! 🙂
