Who doesn’t like chocolate chip cookies?! Okay, not everyone loves them, but to me, chocolate is always good. 😉  I definitely prefer cookies made with whole grains since they have more substance. There cookies are whole wheat, filled with chocolate, and yet nicely chewy and moist. Definitely a recipe I will repeat!

Looks so pretty layered in a jar, with a pretty recipe card attached with the directions! This was part of a housewarming gift for a friend. 🙂

Whole Wheat Chocolate Chip Cookies

(Makes 2 dozens)

1/2 cup butter/margarine, softened
1/2 cup brown sugar, packed
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
1 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups oatmeal
3/4 cup chocolate chips
3/4 cup nuts, chopped
Place oats in a food processor and process until it turns into a powder. In a medium bowl, whisk together the powdered oats, flour, salt, baking powder and baking soda. In a large bowl, cream together butter and both sugars for 3 minutes on medium speed. Beat in eggs and vanilla. Gradually beat in dry ingredients. Add in chocolate chips and chopped nuts.
Roll or scoop dough into 2-inch sized balls, slightly flatten, and place 2 inches apart on ungreased cookie sheet. Bake for 10-12 minutes at 350F. Don’t overbake or they will go crispy instead of soft and chewy! Cool 2 minutes on baking sheet before transferring to a cooling rack.

This recipe is a modification from the Whole Grain Gourmet. The original recipe looks amazing, I just modified it to fit the everyday ingredients I keep on hand, instead of running to the store. 🙂
