I grew up eating these regularly. We called them “croquettes de flocons d’avoine“, since we were a French household. 🙂  They are a vegetarian (not vegan) meal, and we all enjoy it. Now my own family enjoys it, and it makes a nice lunch or supper, as opposed to a meat-laden dish.

 

Oatmeal Croquette

2 cups oatmeal
1 1/2 cup milk
1 onion, diced small
1/4 cup grated cheese
1/4 cup sunflower seeds, ground up (use a coffee grinder, or food processor)
1 tsp parsley
1 tsp garlic powder
1 tsp salt
1 tsp thyme
1 tsp paprika
3 eggs

Mix all the ingredients, except eggs, and let it soak for 30 minutes. Add the 3 eggs. Cook like pancakes on a frying pan. Serve with a white sauce, or mushroom sauce.

 

White Sauce

2 tablespoons butter
2 tablespoons flour
1 cup milk
Salt and pepper to taste
Chicken broth powder (optional)
In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency. Season as desired
