This recipe was the result of wanting a healthy oatmeal muffin, yet craving chocolate! 😀 The muffin itself doesn’t taste all that sweet, but then you add the chocolate chips and YUM! Great combination! This is definitely a good muffin for breakfasts, or snacks.
Double Chocolate Oatmeal Muffins
(Makes 12 muffins)
1 cup oatmeal
3/4 cup flour*
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1/2 cup sugar (brown or white)
2 Tbsp cocoa
1 egg
3/4 cup buttermilk**
1/4 cup margarine/butter
1/2 cup chocolate chips
Mix dry ingredients together. Combine egg and buttermilk, blend in margarine. Add to dry ingredients, stirring only until mixed. Gently fold in chocolate chips. Bake at 375F for 15-20 minutes, or until a toothpick inserted in the middle comes out clean.
* I used all wheat flour and it tasted great, although the muffin wasn’t as risen/fluffy as if you used some white flour. So it’s up to your preference! Wheat, white, or do a mixture of each. 🙂
** I simply added 1 Tbsp vinegar in regular milk, for a total of 3/4 cup.

Yum! What kind of vinegar did you use with the milk?
I used regular white vinegar!
Was it a whole 3/4 cup of regular milk with 3/4 Tbsp added? Or did you subtract 3/4 Tbsp of regular milk and add the vinegar? Sorry if that sounds dumb.

These were AWESOME! The first batch I made tasted a little dry (However I am used to all white flower so it could have been the wheat flour texture that made me think that) But I loved them so much I made another batch the next day 🙂 I added about 4 tablespoons of applesauce to the wet ingredients and they were a little more moist than the first batch.
Oh good! I’m so glad! And yes, white flour makes it more moist. Adding applesauce is a great way to add moistness!! Mmm, I’ll need to try them that way. 🙂
Do you think half bread flour, and half white flour will do? I’m out of wheat & I would love to whip some of these up in the am! I think I’ll throw in some apple sauce too 😉
You know, I’ve never used bread flour. I always just use wheat, white, or spelt. Bread flour is made from hard wheat, with high-gluten, high-protein. It creates a tougher dough for making breads. In a muffin, you don’t need that toughness. I think it would be ok to use some bread flour, but I would probably just stick with using plain white flour instead of the wheat called for in the recipe. 🙂

I used it at room temperature, so yes, softened. You can also use butter, if you’d like!
