We love this recipe! It tastes great as a side to meatballs, hamburgers, meatloaf, roast, chicken, chicken fingers, etc! I almost never buy frozen bags of fries anymore, since this recipe is cheaper, simple, and tastes great. 🙂 If the 3-yr old likes it, why buy “regular” fries?!
Roasted Rosemary-Onion Potatoes
4 medium potatotes (1 1/3 pounds)
1 small onion, finely chopped (1/4 cup)
2 Tbsp oil
2 Tbsp chopped fresh or 2 tsp dried rosemary leaves
1 tsp chopped fresh or 1/4 tsp dried thyme leaves
1/4 tsp salt
1/8 tsp pepper
Cut potatoes into 1″ chunks. Mix remaining ingredients in large bowl. Add potatoes; toss to coat. Spread potatoes in single layer in greased pan. Bake at 450F, for 20-25 minutes, turning occasionally, until potatoes are light brown and tender when pierced with fork.
