This is a very fun project to do with young children, as they love to make their own shape, then eat their very unique pretzel once baked! (And yes, my son is wearing a bike helmet. He really likes wearing it around the house these days!)

Soft Pretzel

1 1/2 cups warm water
1/2 tsp salt
2 Tbsp instant yeast
1 cup white flour
3 cups wheat/spelt

Mix ingredients together and knead until you have a soft smooth dough. Cover and let rise 12 minutes. Shape into various shapes (great fun for children!). Dip pretzels in a bowl with 2 cups cold water and 4 tsp baking soda. Place on greased cookie sheet, and bake at 425F for 7-10 minutes. Eat fresh! You can eat them plain, dipped in salsa, or other anything else you want. 🙂
