Pictured: Midnight Mint Bars and Nanaimo Bars

Here is a delicious variation on the classic Nanaimo Bars dessert. I like these even better than regular Nanaimo Bars, but then I am a mint-lover! Mmmm.

Recipe from Jean Pare’s book: “150 Delicious Squares.”

Midnight Mint Bars

First layer:
½ cup butter or margarine
¼ cup sugar
5 Tbsp cocoa
1 egg
1 ¾ cup graham cracker crumbs
¾ cup coconut
½ finely chopped walnuts

Melt first 3 ingredients in a heavy pot. Add egg and mix until cooked and thickened. Remove from heat. Incorporate graham cracker crumbs, coconut and walnuts. Press firmly in an un-greased 9×9” dish.*

Second layer:
1/3 cup butter or margarine
3 Tbsp milk
1 tsp mint extract
2 cups icing sugar
Green food colouring

Mix butter, milk, mint extract, and icing sugar in a bowl.  Beat well. Add green food colouring to desired green. Spread on top of first layer.

Third layer:
2/3 cups chocolate chips
2 Tbsp butter or margarine

Melt chocolate chips and butter on low heat. Spread on top of second layer. Cool in fridge. Makes 36 squares.

* Tip: Line your dish with foil paper (overlapping the sides) before putting your layers in. Then, once cooled, it is easy to lift the entire square of bars out and cuts much easier than trying to cut and lift each little square out of the dish.
