Date squares remains one of my favourite desserts. As a young teenager, they were my “specialty”. A Grandpa from our church liked them enough to buy me all the ingredients so that I could make him a huge pan! Can you imagine how special that makes a 14-yr old feel?? I think because of that, date squares are kinda special to me. ­čÖé

Recipe a slight adaptation from Betty Crocker’s Cookbook.

Date Squares

1 cup brown sugar
1 cup butter or margarine, softened
1 3/4 cup wheat flour
1 1/2 cups oatmeal
1/2 tsp salt
1/2 tsp baking soda
Date filling (recipe below)

Make date filling.

Mix brown sugar and butter in large bowl. Stir in remaining ingredients until crumbly. Press half of the crumb mixture evenly in bottom of greased 13×9″ pan*. Spread with filling. Top with remaining crumb mixture; press lightly. Bake at 400F for 25-30 minutes or until light brown. Cool ┬á5 minutes, then cut in 36 squares.

Date Filling
3 cups cut-up pitted dates (1lb)
1 1/2 cups water

Cook ingredients in pot over low heat about 10 minutes, stirring constantly, until thickened; cool 5 minutes.

* Tip: Line your dish with foil paper (overlapping the sides) before putting your layers in. Then, once cooled, it is easy to lift the entire square of bars out and cuts much easier than trying to cut and lift each little square out of the dish.
