Kitchen Tip: Easy Baked Potatoes! Tuesday, Feb 21 2012 

I love baked potatoes. Well, let’s change that sentence. I love potatoes, period. In every shape and form! So, of course I love baked potatoes! 😀

I especially love baked potatoes when I make them in the crock-pot! It’s so easy. 🙂

Simply wash your potatoes, and place them in the center of your crock-pot. If you’re doing this in the  morning, put your crock-pot on the low setting, or if it’s after lunch before you get around to it, place it on high. It only takes a couple hours on high. If you leave them in too long, the end against the crock-pot will get tough, but that’s no big deal. It’s easy to cut it off, or just eat as is! 🙂

I love making my baked potatoes in one crock-pot, and my chili or main dish in another! Super easy meal, yet wholesome, homemade, and yummy. 🙂

Crockpot Sweet and Sour Chicken Friday, Jan 13 2012 

 

I love easy recipes. I love yummy recipes. I love crockpot recipes. So naturally, I love this recipe. 😉  It’s sweeter than the typical meal I make, but such a fun treat. Made with basic ingredients I always have on hand means this meal is quick to make on the spur of the moment!

If you didn’t plan ahead, you can also cook this on a pot on the stove instead of the crockpot.

 

Sweet and Sour Chicken

2 Tbsp ketchup
1 cup water
1/2 cup vinegar
1 Tbsp soy sauce
1 cup brown sugar
1 1/2 lbs chicken pieces, uncooked

Mix in crockpot and cook on low 6-8hrs, or on high 3-4hrs. 20 minutes before serving:

Combine:
2 Tbsp corn starch
2 Tbsp water

Stir into slow cooker. Cook on high 15-20 minutes or until thickened. Serve over brown rice.

Crock-Pot Chili Monday, Nov 14 2011 

What’s better than cornbread and chili on a cold fall/winter day?! I love that stuff! There are lots of ways of making chili, and it seems like mine comes out different every time, but here is how I made my last batch. 🙂

This recipe is very quick for me to make in the morning, since I always keep cooked ground beef in the freezer. Just throw all the ingredients in the crock-pot and voila!

 

Yummy Chili

56oz diced tomatoes (2 cans of 28 oz)
1 can tomato soup
1 large onion, diced
3 cloves garlic, minced
1 1/2 lb ground beef
1 cup corn
1/2 tsp cumin
1/2 tsp chili (more of less depending on preference*)
1 1/2 tsp oregano
1 tsp salt
1/2 tsp pepper
2 cups kidney beans (I cook my own, or use 1-2 cans)
1 cup green peppers, diced (none in my chili pictured above)

Brown onions, garlic, and ground beef together. Mix all ingredients in large crock-pot and cook on high 4-5hrs, or low 7-9hrs. Delicious on homemade cornbread or with corn chips!

*My chili powder happens to be very hot for some reason, so it takes much less than typical chili powder.
